Consumer awareness and purchases of probiotic-containing products have skyrocketed. Has this paved the way for promoting and marketing prebiotics in dairy foods?
A common sentiment among food industry experts is that consumers aren’t yet ready to hear about prebiotics. I respectfully disagree. As a nutrition therapist, I’ve noticed an increased interest in probiotics among my clients, which is the perfect opportunity to explain that certain fibers, called prebiotics, are needed for probiotics to survive and thrive.

Marketers of dairy foods and beverages need to understand the world view and the habits of the Millennial generation. For example, 40% shop once a week with a plan in mind and shopping list in hand; 26% are currently or would consider buying food from the online retailer Amazon. Many prefer to shop specialty stores like Trader Joe’s and health food stores like Whole Foods.
Milk production has slowed, the butter market is tight and cheese production is trending lower.

Milk production has slowed across much of the country. The combination of hot weather and typical seasonal declines is slowing availability of manufacturing milk.
