New Opaa! brand feta spreads from Grecian Delight Foods Inc., Elk Grove Village, Ill., rely on cows milk feta cheese as a base ingredient, to which an array of spices and vegetable pieces are added for some kick. For example, the Zesty variety blends tomatoes and green peppers with spicy serrano peppers. There’s also Garden Feta (with green peppers and onions) and Sun-Dried Tomato. A 2 tablespoon serving contains 50 to 60 calories and 4 to 5 grams fat, depending on variety. This, the company touts, is half the fat of most other cheese spreads in the market.
Also part of the line is a Creamy Feta variety, which blends mayonnaise with crumbled feta cheese and spices. The end result is said to be an authentic Mediterranean-style spread.
The feta cheese used in all of the varieties yields a smooth, soft-textured spread that “doesn’t break the cracker,” according to the company. The spreads can also be used as salad dressings, sandwich condiments and sauces for flat bread pizzas and pasta.
