The Wisconsin Center for Dairy Research invites all cheese manufacturers to attend the Center's first sheep, goat and mixed milk artisan short course to be held April 15, 2014, at Babcock Hall in Madison, Wisconsin.
This unique, one day, hands-on workshop, will be led by CDR staff and special guest, industry consultant, technical judge and small ruminant expert Mariana Marques de Almeida of Lisbon Portugal. The course will include a cheesemaking lab as well as time in a classroom setting where participants will discover the science behind sheep, goat and mixed milk composition, coagulants, manufacturing protocols and much more.
