Westby Cooperative Creamery, Westby, Wis., expanded its new organic brand with the addition of Westby Organic butter. Sold in a 1-pound carton containing four quarter-pound sticks, the organic sweet cream butter is lightly salted with Celtic sea salt and contains 85% butterfat. It is ideally flavored for spreading and melting on foods, the company said, and has the high butterfat content that is often preferred for cooking and baking. A 1-tablespoon serving contains 106 calories and 12 grams of fat (less than 1 gram of both protein and sugar). The butter is available in retail grocery stores and foodservice outlets in Wisconsin and Minnesota. The product will also be available in 40-pound and 55-pound bulk sizes for use in foodservice and food ingredient applications.
