DDW created a new application for its oil dispersible technology. It allows the use of caramel color, normally water soluble, for dispersion into an oil-based dairy system. A naturally derived, rich brown hue is now an option for manufacturers of cream cheese or other solid dairy spreads. Dairy product designers can use the oil-dispersible caramel color to suggest sweet or savory flavors, such as pumpkin spice, roasted onion or cinnamon apple. The new coloring helps to provide a roasted fruit or vegetable appearance for flavors including apple, pear, mango and onion.
