Symrise's new line of tropical fruit flavors go tropicals! now feature mango, guava, papaya, pineapple, lychee, passionfruit, pomegranate, coconut water and prickly pear. "With Latino flavors having gone truly mainstream, more ëfringe' tastes in the tropical fruit flavor category are gaining acceptance, paving the way for less familiar subtropical flavors such as those found in the Caribbean and South and Southeast Asia,î said Emmanuel Laroche, Vice President Marketing & Consumer Insights (MCI), North America.
He further explained that Symriseës MCI group conducted consumer market research to decide which tropical fruit flavors would comprise the line. Consumers across the country, representative of key life stages, participated in the online study.
Generally, these consumers indicated a preference for the more familiar tropical fruit flavors, but they also demonstrated an enthusiastic willingness to try the newer varieties that were cited in the study. Among ethnic groups, Asians demonstrated interest in all of the tropical fruit flavors.
In some cases, tropical fruit flavors were first experienced by travelers to the Caribbean, Central American and South American locations. "Today,î he added, "these consumers are among the many who are finding these appealing tastes in menu items at local Latino restaurants and in products that line the shelves in specialty stores and supermarkets in both Latin American communities and upscale markets across the country.
Symrise tropical fruit flavors have been used by the company's applications specialists in a wide range of formulations. "We have tested them and have created enticing prototypes, from confectioneries to bakery products to savory toppings and desserts, and from still drinks to teas and carbonated beverages and cocktail mixers.
Deborah Kennison, Vice President, Research & Development, said that when they are used in fortified beverages and food formulations, there is substantial evidence that some of these tropical fruit flavors effectively mask the off-tastes of some vitamins and minerals.
