Made in 10-lb wheels, the company’s Cardona is aged and rubbed with cocoa powder. The cocoa flavor is subtle, while the rind is a lovely brown. It took 1st Place at the 2007 American Cheese Society and won Best in Class in the 2008 World Championship Cheese Contest.
