The Wisconsin Department of Agriculture Trade & Consumer Protection is proposing a change in Federal Food Code to exempt specific cheeses from the definition of "potentially hazardous food" and to revise the current storage temperature requirements. IDFA says the proposal was submitted last month to the Conference of Food Protection. After reviewing the proposal, which was based on a paper commissioned by the National Cheese Institute (NCI) and compiled by the Wisconsin Dairy Research Center, the Conference recommended that FDA review it for possible changes to the code in 2007.
