In ancient times, humans became lactose intolerant, or unable to fully digest the sugar (lactose) in milk, after childhood. Not surprisingly milk is a top growth driver in the lactose-free dairy market, while functional ingredients like proteins and fiber add value and better nutritional support.

Dairy Farmers of America (DFA) announced the acquisition of two extended shelf-life (ESL) processing facilities from SmithFoods. The processing plants, located in Richmond, Ind., and Pacific, Mo., produce a variety of extended shelf-life dairy and non-dairy beverages, ice cream and shake mixes for both retail and food service customers.
Despite a 3.3% decrease of unit sales, the milk category demonstrated strong strength, notching an increase of more than 7% to $15.32 billion for the 52 weeks ending Sept. 4, IRI data reports. Milk is king of the dairy category leader, followed by Cheese and Yogurt.

According to Feeding America, more than 38 million people, including 12 million children, are facing hunger and food insecurity, with added pressure caused by inflation. And, while every community in the country has families that face hunger, rural communities are especially hard hit.
