Milk available for cheese making is tightening seasonally across much of the country. Limited spot milk loads for cheese production are available at premiums above Class. Cheese plants that want to run at highest efficiencies are looking for milk or additional solids to bolster production.
Cream prices are gyrating ahead of the holiday. More offerings are being noted over the weekend with cream cheese manufacturers showing the greatest demand for cream.

Hot, humid weather conditions have accelerated milk production declines in Florida, Arizona and the Midwest. Manufacturing milk supplies have declined across most of the nation; due to milk production declines and Class I demand increases.
Organic whole milk sales for June were up 8.2% compared with June last year.

Total Organic Milk Products sales for June 2013, 179 million pounds, were up 5.8% from June last year. Organic Whole Milk sales for June 2013, 47 million pounds, were up 8.2% compared with June last year and up 8.9% year-to-date compared with last year.
As students head back to school, cheese sellers expect 'sharp increases' in demand; milk processors see increased activity.

Cheese shreds in 8-ounce packs were the most featured individual item this period, appearing in 12,755 ad features. The national price averaged $2.36, up 12 cents from two weeks ago. 8-ounce blocks, at $2.43, moved 7 cents higher from two weeks ago. Schools have reopened in the Southern tier of states across the nation sending an increasing number of milk loads to bottlers to meet the increased Class I demand.
While lemonade and apple juice sales go sour, cranberry cocktail, vegetable juices and smoothies rise above the rest. Unit sales of that old standby, orange juice, are squeezed.
Retail prices of regular yogurt drop compared to a year ago; shredded cheese is up 13 cents.

The retail price for a pound of butter is $2.53, a drop of 51 cents from two weeks ago. Shredded cheese, ice cream, regular and Greek yogurt prices rise.
Though yogurt continues to dominate the news (and aisles) for cultured dairy products, cream cheese, specifically soft cream cheese, saw a jump in dollar and unit sales.
Natural cheese continues to dominate the cheese aisle as the popularity of healthier products remains high with consumers. Meanwhile, most processed cheese products continue to miss the mark as sales drop.
Yogurt is a bright star in the dairy firmament, and brands are seizing the opportunity. Chobani took to the air with television ads during the Oscar ceremonies. Muller Quaker Dairy expands distribution into the Midwest and Southeast.

Everybody loves yogurt: dairy farmers, dairy processors, industry vendors, retailers and consumers. Yogurt production in the United States rose 4.2% from 2011 to 2012, according to the U.S. Department of Agriculture.
