Züger Frischkäse, Switzerland, produces a lactose-free organic mozzarella ball, which is one of the new cheese products being featured at next month’s Anuga food fair. The show takes place October 5-9 in Cologne, Germany.
The fresh mozzarella ball is made from lactose-free, pasteurized cow’s milk. Lactase is added to the cow’s milk at the beginning of the process. This splits the milk sugar into glucose and galactose. The splitting into simple sugars makes the cow’s milk easily digestible even for those allergic to lactose. The splitting of the milk sugar gives the lactose-free Züger mozzarella a slightly sweeter taste, according to the company.
The mozzarella is available in packages of eight 100 gram mozzarella balls. The company produces a variety of other cheeses, including feta cheese, cream cheese and ricotta.
